Vanilla ice cream with cantuccini

Ingredients
1 vanilla pod
325 g (whole) milk
110 grams of whipped cream
90 grams of sugar
22 g base mix ice cream
175 g cream cheese

Preparation
Start baking the cantuccini biscuits, according to Rutger Bakt's recipe. Once the biscuits are in the oven, it's time to get started on the ice cream, let's go!

Prepare the basic ice cream mix according to our recipe with all the above ingredients. Do not add the cream cheese until the mix has cooled down. Is the ice cream mix ready? Then pour it into the CUBE and turn on the machine. Biscuits & ice cream ready? Crumble the cantuccini into small pieces and add them to the ice cream to taste. Delicious!

Sorbet lemon ice cream with basil

Ingredients
513 grams of water
154 grams of sugar
26 g base mix sorbet
10 g white wine vinegar
125 g freshly squeezed lemon juice
8-10 basil leaves, finely chopped

Preparation
Prepare the base mix according to our recipe with the above ingredients. Use all ingredients except the lemon juice and basil. The basic recipe can be found at here. Now add the lemon juice to the mix and use a blender to get an even mixture. Then it is now time to pour it all into the CUBE. Just before the ice cream is ready, you can spat the basil leaves through the ice cream. The ice cream is now ready, time to enjoy!

Raspberry cheesecake ice cream

Ingredients
231 g (whole) milk
77 grams of whipped cream
66 grams of sugar
15.4 grams base mix ice cream
2 teaspoons lime zest
4 g lemon juice
125 g cream cheese
225 grams of raspberries

Prosecco & strawberry sorbet ice cream

Ingredients
65 grams of water
100 grams of prosecco
140 g sugar
35 g base mix sorbet
350 grams of strawberry
5 g lemon juice

*Tip: you can also replace the strawberry with, for example, forest fruit, raspberry or orange. When the ice cream is ready, add some more pieces of fruit if necessary.

Lemon sorbet ice cream

158 grams of lemon juice

Red fruit sorbet ice cream

Ingredients
380 g water
114 grams of sugar
3 g lemon juice
19 g base mix sorbet
250g red pane (strawberries, raspberries, cherries, redcurrants or a combination)

Amaretto ice cream with amaretti

Ingredients
1/2 vanilla pod
420 g (whole) milk
140 grams of whipped cream
120 g sugar (granulated sugar or cane sugar)
26 g base mix ice cream
70 ml Amaretto

Preparation
Start baking the amaretti biscuits, according to Rutger Bakt's recipe. Once the biscuits are in the oven, it's time to get started on the ice cream, let's go!

Prepare the basic ice cream mix according to our recipe with all the above ingredients. Do not add the Amaretto until the mix has cooled down. Is the ice cream mix ready? Then pour it into the CUBE and turn on the machine. Biscuits & ice cream ready? Crumble the amaretti into small pieces and add to the ice cream to taste. Delicious!

Orange Liqor 43 ice cream

Ingredients
Β½ teaspoon vanilla extract
363 g (whole) milk
112 grams of whipped cream
96 grams of sugar
23 g base mix ice cream
150 grams of orange juice
3 tablespoons Liqor 43
4 g lemon juice

Preparation

*Tip: vary the amount of Liqor 43. When the ice cream is ready, add some pieces of orange (grater) if necessary.

Pear-finger ice cream

Ingredients
231 g (whole) milk
77 grams of whipped cream
66 grams of sugar
15.4 grams base mix ice cream
250 grams of pear
4 g lemon juice
100 g flesh of ripe figs

*Tip: vary the amount of pear and when the mass is ready, add another 50g of fresh fig pieces to the ice cream.

Mascarpone & lime ice cream

Ingredients
1/2 teaspoon vanilla extract
294 g (whole) milk
98 grams of whipped cream
84 grams of sugar
20 g base mix ice cream
2 tablespoons of lime zest
126 grams of lime juice
105 g mascarpone
4 g lemon juice

Preparation

Add the lime juice, lemon juice and mascarpone to the mix once it has cooled down. Then pour the mix into the CUBE, turn on the machine and wait!

Orange sorbet ice cream

Ingredients
juice of half a lemon
370 grams of water
114 grams of sugar
25 g base mix sorbet
200 g freshly squeezed orange juice

Licorice ice cream

Ingredients
150 grams of soft sweet liquorice
230 g whole milk
231 g (whole) whipping cream
232 g brown soft sugar
20 g base mix ice cream
50 grams of water

Preparation
Cut/cut the liquorice into small pieces and dissolve them in the milk, water and cream in a saucepan over low heat. Then prepare the basic mix further according to recipe and at about 60 degrees add the caster sugar and base mix and heat to 85 degrees. Let the mix cool and then turn it into ice cream in the CUBE!

Blueberry ice cream

Ingredients
357 g (whole) milk
119 grams of whipped cream
102 grams of sugar
23.8 grams base mix ice cream
150 grams of blueberries

Pistachio ice cream

Ingredients
marrow of half a vanilla pod
420 g (whole) milk
140 grams of whipped cream
120 grams of sugar
28 g base mix ice cream
60-90 grams of pistachio paste

Preparation
Prepare the base mix according to our recipe with the above ingredients. You can find the basic recipe here. Is the ice cream mix ready? Only then mix in the pistachio paste, blend well. Then pour the mix into the CUBE, turn on the machine and wait.

Speculaas ice cream with spiced nuts

Ingredients
ΒΌ vanilla pod or vanilla extract
1 teaspoon specula spice
260 g (whole) milk
260 grams of whipped cream
110.5 grams of sugar
26 g base mix ice cream
100 grams of speculaas biscuits

Preparation
Prepare the basic mix according to our recipe with the above ingredients. Use all ingredients except the speculoos chunks. The basic recipe can be found at here. Is the ice cream mix almost ready? Then it is now time to add the speculoos chunks into the machine. It is also possible to manually spat the chunks through the ice cream later.
